Lentil and Brown Rice Casserole

Okay, this recipe came from “Betty Crocker’s Vegetarian Cooking” ISBN 0-02-862261-8 page 237. I like it because it’s very simple. There are five ingredients: lentils, uncooked brown rice, vegetable broth, frozen green beans, and shredded cheddar cheese. Basically, you throw everything in a casserole dish, lob it in the oven for an hour and a half and poof! There’s your meal. I can deal with this.

I love the simple ease of it. Nothing to shop for, only one dish used, not a lot of messing around, no substitutions necessary. The only thing I do to jinx it is to double it because I have a reeeeeaaaally big casserole dish. It does take a while to cook, and it is quite filling. I’m a little creeped out by the total lack of anything fresh in the ingredient list. Don’t most people go veggie for their health? However, it performs the function of vegetarian meal quite effectively.

The cookbook is quite nice to have. There are several recipies in it that are quite realistic to make and don’t require a lot of exotic ingredients.

And, just for the record, the pointy end of the timer indicator is the important part. The fact that the other end has a dot that seems to indicate it’s the marker is just a cruel joke of the manufacturer. At least I’ve figured out how to turn the blasted thing off. (No, it doesn’t involve a big rock – though that would probably work, also)
